This photo pretty much sums up how I feel today! It was one of those days that started out way too hectic!!! Leaving the house was great! Even actually a bit early! My son is attending a summer camp this summer and I wanted to get there early since I needed to pay and pick up a schedule.
But then about 20 minutes into the car ride, my son says that his stomach hurts. Recently, he has been getting car sick off and on! So, I knew I needed to stop. So, I pulled over into a gas station because I needed gas anyway, and let him out to get some fresh air and walk around. But, no sooner did he get out of the car, and he vomited his breakfast up right there at the gas pump! Bless him! He said he felt better and we loaded back up. Then as I was about to pass the place where I work, Ben said again that he didn't feel good. So, I pulled into a small parking lot and was opening the back door for him which he had a hold of...... this made him fall right out of the tahoe onto the concrete! He scratched up his left shoulder and his knees!!! :( Then threw up again! UGH! There he was crying and me trying to console him! Luckily, the grandparents were on speed dial and came to the rescue and said they would keep him for the day! So, we loaded up once again and back tracked to the grandparents house! Thank goodness I left my house early which accommodated the delays, and not be late for work! UGH! On a bight note, I soon would get a text that he was feeling much better and ate breakfast! He spent the day helping his papa run do chores around the house.
Due to Ben staying with the grandparents, I felt the need to run my errands during lunch! This meant taking my packed salad with me in the car to eat in between errands! It isn't the first time and won't be the last. Gotta do, what you gotta do! I usually get in 2-3 bites in between errands. Hey, allows me to space out bites and slow my eating since I usually engulf everything anyway. But nurses and busy moms know how it is!!! Gotta eat fast and sometimes on the run!
With all these cucumbers, what to do? what to do?!? So, of course, I turned to pinterest!!! I found a PIN of healthy snack ideas that was from complete-health-and-happiness.com. The following are the ingredients:
1- Cucumber
2- cherry tomato
3- cream cheese (I used Philadelphia chive & onion cream cheese spread)
Probably not the best food photography especially on a paper plate...LOL
And..... the finished product!!!! Yum-my!!!! :)
Not sure if the above picture does this justice.... this snack is absolutely delicious!!!!
Well, I am going to relax and get to bed early! Tomorrow is a BRAND new day! Until later!
